Online Jewelry Design Application: Java? Flash? Help!

We are a family owned, jewelry site specializing in a variety of unique, handcrafted Hawaiian jewelry featuring shells, shark teeth, coral, and natural materials of bamboo, coconut, and carved bone gathered throughout Polynesia The direction we want to take the site is choices, choices, choices. However, our design page is severely lacking. We have a large variety of shells, shark teeth, hooks, carvings, woods, etc. and more to come. I would say that at this point, we have close to the number of elements as the bead site. What we are looking for, specifically, is someone to re-create the design element and integrate it into our existing site. We would want to be able to know how to update/add images and prices at a later date. We don't have the images of the shells, teeth, carvings, etc. yet as we are waiting to see if the application is something that could work for us and if it was cost [login to view URL] are not locked into the whole Java applet concept.
