Build me a sales projection database for my restaurant

My name is Tito, I own a taco truck, and I need your help with Operation Tito's Taco Takeover. Our business is very similar to chipotle where we use a set amount of ingredients and make the majority of them each morning before opening for business. Here is the sales projection flow I'd like to accomplish: -Develop an API to automatically pull same day sales for the last 4 weeks and same day last year from my POS Square. -Take the mean of pulled sales to give me a daily and weekly sales projection. -The sales projection is then used to give me an estimated amount of end recipe yield that will be needed for that week. i.e How many oz of pico, grilled chicken, or beans that will be needed. -The estimated amount of end recipe yield is then used to determine how many cases of food to purchase from my food distributor. -The estimated amount of end recipe will also be used to determine how many persons to staff on a daily basis based on predetermined recipes/tasks and their completion times.
