Migration from Office 365 to Gsuite

Hi,
We are migrating from Office 365 & dropbox to gsuite, we have moved over the email addresses (putting the gsuite on .com and keeping the shared mailboxes (Office 365) on .net) which works fine, but is only 1/2 way there.
We have some shared resources in Office 365 such as a shared mailbox ie. "Sales" where all emails from customers are archived. We would like to migrate this to gsuite and believe that we need to change how we are working ie. using labels or collaborative inboxes etc.
Odoo is our ERP system.
We do not yet understand Labels fully which seems to be the key to gmail and we have not worked out how they can be shared with other team members - to replicate the functionality that we currently use.
We would like someone to guide us / help us through this process:
- advising us on the best way to setting up shared resources (emails / google drive etc)
- assisting us in the migration process
- poiniting us the right direction for training resources (so we can get our staff up to speed
- helping us understand what admin would need to be done regularly etc.
