Shopping cart - many categories and sub categories

I need a website similar to: [url removed, login to view]

Note that the site has many categories and subcatgories. Not all of the main categories have the same amount of subcategories. For example:

Main Category1 --> subcategory --> subcategory --> product

Main Category2 -->subcategory --> Product

The site will be able to accept credit card payments, as well as paypal. I need the credit card information encrypted as it is stored into the database and can be decrypted by the user in the admin section(if you have a better idea let me know, I'm open to suggestions)

I also need the database to be backed up every 3 days or so. SSL will also be installed and I want you to take care of it.

Finally, I need someone that can communicate well in english and can be accessed easily through AIM, Messenger or email.

If possible, please provide a shopping cart demo for me.
