I have 2 years experience developing in Unity3D, and have used the Kinect for multiple projects including 3D motion capture tracking (relevant) and integration with the Oculus Rift. I own multiple Kinects, so would be completely able to set up the work you require, and will be able to show you a demo when I am at my computer, so please be in touch to receive either a video or playable demo of your choice. As an overview of how I will create the application, I will take the data in from the Kinect through the SDK, and pass that onto a skeletal mesh in Unity. This rigged mesh will allow me greater control over analysis of the position that the user is in, and will allow me to show degrees of success. Furthermore, I will create an Intuitive UI system that will allow the user to access all of the screens (games or excersises etc) using hand gestures as well as having an option to use the mouse. Lastly, I will include a solid calibration system that will allow you to calibrate your Kinect on a per user basis, meaning that any one user has a truly tailored experience.
