SCOPE OF THE WORK: Your project can be done with a basic MCU like ATmega328 (Arduino Nano). I can write a sketch with #defines to configure the Arduino according to your sensor output, be it digital or analog. Ice produces a resistance of up to a few Megaohms depending on the distance between terminals. An Arduino can easily measure this with the proper interfacing. Testing part can be done through online so your project will be completed in the given time frame if all the hardware are available.
